Principle

Alcohol preservative is a preservation liquid composed of alcohol, fatty acids, and flavours soaked in porous whey fibres. It is specially packaged and refined. It can inhibit and kill a variety of molds, bacteria and other spoilage bacteria, and combine with free water in food to reduce its water activity, so as to achieve the purpose of fresh-keeping. It is mainly used to prevent mould in Chinese and Western pastries and mooncakes.
